ROAST BEEF

Ingredients

›› 1 .5 kg Topside of Beef
›› 2 Red Onions
›› 2 Carrots
›› 2 Celery Sticks
›› 30 ml Olive Oil
›› 15 ml Robertsons Steak & Chops Spice Robertson Sweet Basil

Instructions

›› Try to have your beef at room temperature before it goes into the oven. Preheat the oven to 240°C (very hot).
›› Without peeling the vegetables, rinse them and chop them roughly. Place the vegetables into the middle of a large roasting tray and drizzle with olive oil.
›› Drizzle a fair amount of olive oil over the beef. Mix the Robertsons Steak & Chops Spice with the Robertsons Sweet Basil and rub it over the meat.
›› Sprinkle any left-over spice mix over the vegetables and toss to coat. Place the beef on top of the vegetables. Place the roasting tray in the preheated oven.
›› Turn the heat down to 200°C immediately and cook for one hour for medium beef. If you prefer it medium-rare, take it out 5 to 10 minutes earlier. For well-done beef, leave it in for another 10 to 15 minutes. Serve with roast potatoes.
